Sweet Chicken Salad Sammie is a make-ahead and take-anywhere, DELICIOUS sandwich.
We all need an easy go-to for lunches – beach days, pool days, house guests, travel, amusement parks. This is ours. I use either leftover chicken I have on hand or I pick up some already cooked, and then sweeten the deal with some fresh pineapple and dried cranberries. And my family is always happy! Sweet Chicken Salad Sammie
- 2 c cooked chicken, chopped
- ⅓-½ c light mayonnaise
- ½ c pineapple tidbits
- ¼ c dried cranberries (such as Craisins)
- good pinch kosher salt
- pinch fresh cracked pepper
- 1 large celery rib, diced
- 4 Hawaiian sweet sandwich buns
Combine all ingredients (except the rolls of course) in a bowl. Serve on the sandwich buns. Yields: 4 servings.
