I love this marinade so much! It would work well with any meat, and I use it also with steak for Gyros. If you don’t have fresh herbs, no worries! Just use 1 t each dried thyme and oregano. That’s why I love this marinade – it’s very versatile.
1/3 c olive oil
1/2 c lemon juice
2 large cloves garlic, rough chop
1 T fresh thyme leaves
1 T fresh oregano leaves, chopped
1/2 t kosher salt
1/2 t fresh cracked black pepper
Just combine in a large ziploc bag and add your meat of choice. If marinating steak, do so overnight in the fridge. If using chicken, marinate 6-8 hours in the fridge. Then grill!
