I make this rice recipe all the time. Often, I’ll make up a batch on Sunday, then eat it with baked salmon or chicken for lunches during the week. I also serve it up a lot at dinner with Mexican or Tex-Mex dishes. Too easy and sooo healthy!
Favorite Lime Brown Rice
- 1 c brown rice, cook according to my Perfect Brown Rice recipe
- 2-3 T chopped cilantro
- zest of a lime
- juice of half a lime
- 1/2 t kosher salt
- 1/4 t chili powder
- 1/4 t fresh ground black pepper
Just toss all the ingredients together and season well with the salt, pepper, and chili powder – the amounts I give above are approximate, season to taste!
