Apple Juice Roasted Carrots

So…roasting veggies. Some go right in the oven with a little olive oil and seasoning and come out perfect. Others need a little more love so they don’t come out tough. Carrots need love. And that is accomplished by letting them simmer in juice a bit before roasting!

Apple Juice Roasted Carrots

  • 12 small carrots, colored if available
  • 4 c apple juice
  • 1 T extra virgin olive oil
  • ½ t kosher salt
  • ¼ t fresh cracked pepper

In a medium saucepan, bring the apple juice to a boil. Add the carrots, reduce heat to medium-high, and simmer 20 minutes. Drain.

Preheat oven to 400F.

Transfer the carrots to a rimmed baking sheet. Toss with the oil, salt, and pepper. Roast at 400F for 20 minutes until slightly caramelized. Serve!
