So who doesn’t love St Patty’s Day right? Cuz it’s around the corner, you know. Isn’t there a saying, “everyone’s Irish on St Patrick’s Day” or something. I’m Irish. I’m all the other countries around there too, but I know I’m Irish. I may spend the rest of the year wishing I were Italian, but on St Patty’s day, I’m happy I’m Irish. So of course food goes along with all this. After all, it is a feast day…

Ages ago, I gave you a Potatoes Colcannon loaded with cheese and kale that is very delicious, but I wanted to give it another new twist with a different green. And boy do I loooove this recipe. This is sooo good. (adding ooooo’s helps me make my point, right? Is it working?) And who doesn’t want to feast on glorious Swiss chard, my favorite green by far.

Another little twist is I used red skinned potatoes and left the skins on. I just love those flecks and pieces of potato skin in my mashed – or smashed – potatoes. And with the beeeautiful green from the chard, it’s all just so pretty.

See, Irish food can be fun! The whole Saint Patty’s thing is fun too. So, this year you can probably expect a couple more Irish-ish recipes from me {wink}. I’ve just been in that kind of mood. The kind of mood that wants to eat creamy Swiss Chard Potatoes Colcannon.

Ingredients

  • 2 lbs red potatoes quartered
  • 4 Tbsp unsalted butter divided
  • ½ cup milk
  • ½ cup half and half
  • 1 bunch Swiss chard woody stems and ribs removed, leaves chopped
  • 1 clove garlic minced
  • kosher salt
  • fresh cracked pepper
  • fresh snipped chives

Instructions

  • Put the potatoes in a pot and cover with cold water. Bring to a boil and cook at a gentle boil, reducing heat if necessary, 10-15 minutes or until potatoes are fork tender.
  • While the potatoes are cooking, heat 1 tablespoon butter in a medium saute pan on high heat. Once it starts sizzling, reduce heat to medium-high and add the Swiss chard, garlic, and a pinch of salt. Toss the greens in the butter and saute, tossing regularly, until the chard is very wilty and awesome (watch so the garlic doesn't burn). Remove from the heat and set aside.
  • Once the potatoes are cooked, drain immediately and return the taters to the pot. Mash the potatoes. Add the milk, half and half, 2 tablespoons butter, couple grinds of pepper, and a couple good pinches of salt. Stir in the chard and garlic mixture.
  • Use the remaining tablespoon of butter to serve the potatoes with a little melty pat on top, sprinkled with chives.
