– 3 Tbsp unsalted butter– 3 Tbsp all-purpose flour– ½ cup milk– ½ cup half and half– 4 oz Vermont white sharp cheddar cheese– 2 (3-4 oz) lobster tails– ½ pinch kosher salt– 1 pinch cracked pepper– ¼ cup dry sherry– 1 ½ lb haddock
