1/2clight mayonnaiseI use Hellman's Olive Oil mayo
juice of half a lime
zest of 1/2 lime
Process all ingredients in a food processor. Yields a little over a cup.
This dressing will keep for a day because of the acid from the lime, but once added to your salad or however you're using it, it will oxidize as all things avocado do. So add it when ready to serve. Also, this dressing does freeze well.
