Smoked Marinara and Meatballs

– 1 lb ground pork – ½ cup freshly grated parmesan cheese – ¾ cup plain panko breadcrumbs – 2 large eggs lightly beaten – ½ tsp kosher salt – ¼ tsp fresh cracked pepper – 1 tsp Italian seasoning – 1 batch Marinara

Make the meatballs.

Add your hickory wood. A little goes a long way, so you don't need much. Also, use the wood dry (not soaked)..

Set the meatballs over a Dutch oven with the marinara to smoke.

Meatballs are ready to go into the sauce after 30-40 minutes.

Set the meatballs into the sauce to cook simmer so the meatballs are tender and the sauce thickens.
