Queso Blanco Dip
White queso dip with tomatoes, green chilies, and beer that is ready quickly for a perfect party food.
- 1 lb Queso Blanco Velveeta
- 1 10 oz can Original Rotel diced tomatoes and green chiles undrained
- 1/3 cup beer
- 1 tsp fresh cilantro chopped (optional)
Preparation in a slow cooker
Put all the ingredients in a small slow cooker.
Heat on high, stirring occasionally, until cheese is melted and mixture is smooth.
Preparation on the stove-top
Put all the ingredients in a medium saucepan.
Heat on low/medium-low, stirring often, until cheese is melted and mixture is smooth.
Preparation in the microwave
Put all the ingredients in a microwave safe dish or bowl.
Heat on high for 1 minute, stir, and repeat until cheese is melted and mixture is smooth.
Use additional beer to adjust consistency, if desired. I prefer my queso a touch on the thinner side rather than real thick.
I let my kids eat this up as much as they want. I cook with beer or wine all the time and never worry about it as an ingredient.
