  • 8 oz pkg yellow rice such as Vigo
  • 1 can mild Rotel drained
  • ½-1 tsp (to taste) chili powder
  • 2 Tbs chopped fresh cilantro
  • fresh cracked pepper


  • Cook the rice according to the package directions. Toss with remaining ingredients and serve!
