Place the garlic on a double layer of foil. Drizzle a little olive oil over and season with salt and pepper. Wrap the foil loosely around the garlic to make a pouch. Bake at 375 for 45 minutes to an hour. Set aside until cool enough to handle.
Squeeze the roasted garlic cloves into a small mixing bowl. Add the butter. Using a fork, mash the butter and garlic together, breaking up the garlic, until well combined. Mix in the parsley and a pinch salt.
Heat the oven broiler.
Take the baguette and cut into thick 1-inch slices. Spread the garlic-butter mixture on both sides (don't skimp!). Place on a bake sheet and broil, a couple inches from the broiler, until top is browned and toasted (~2 minutes). Flip the bread and toast the other side. Serve!
