Mexican Chicken Pizza

Ingredients
 

  • 1 prepared whole wheat pizza crust
  • 1 yellow tomato seeded and diced
  • 1 red tomato seeded and diced
  • ½ cup fresh spinach leaves chopped
  • ¼ cup thinly sliced red onion
  • ½ cup canned black beans drained and rinsed
  • 1 cup shredded part-skim mozzarella cheese
  • 1 cup shredded sharp cheddar cheese
  • 1 cup cooked chicken chopped
  • garnish: fresh chopped cilantro salsa, sliced avocado, and sliced pickled jalapenos

Instructions
 

  • Heat oven with the pizza stone in the oven to 450℉.
  • While oven is heating assemble the pizza. Layer the ingredients in the following order on the prepared pizza crust: mozzarella cheese (on the bottom to act as a glue and keep the other toppings on!), tomatoes, onion, spinach, beans, chicken, cheddar cheese.
  • Transfer the pizza to the preheated pizza stone. Bake ~12 minutes or until toppings are hot and cheese is melty and golden.
