Cajun Salmon Sliders with Remoulade

Salmon sliders with peppery arugula and kicked up remoulade, topped off with a crunchy onion ring. These sliders rock in the tasty tasty way only Cajun can.

Ingredients
  

  • 1-½ lbs salmon skin removed
  • kosher salt
  • fresh cracked pepper
  • Cajun seasoning
  • Old Bay seasoning
  • arugula leaves
  • slider buns
  • Alexia Brand Onion Rings 1 per slider

For the Cajun Remoulade

  • 1 cup light mayonnaise
  • ¼ cup finely chopped green onion
  • 2 tsp chopped garlic
  • 1 Tbs prepared horseradish
  • 2 Tbs whole-grain mustard
  • 3 tsp yellow mustard
  • 3 Tbs ketchup
  • 1 tsp hot sauce
  • 1 tsp Worcestershire sauce
  • pinch kosher salt
  • ½ tsp cayenne pepper
  • ½ tsp Cajun seasoning
  • 1 tsp fresh cilantro leaves minced
  • 1 tsp finely diced fresh jalapeno

Instructions
 

  • In a bowl, combine the ingredients for the remoulade. Put in the fridge to chill and let the flavors blend, at least 30 minutes.
  • Heat oven to 400°F.
  • Cut the salmon into square portions to fit your buns. Season the salmon with salt, pepper, Old Bay, and Cajun seasoning and place on rack in a rimmed bake sheet.
  • Bake the onions rings according to package directions. At the same time, bake the salmon 10 minutes or until salmon is just cooked though.
  • To assemble sliders: On the bottom bun, layer arugula, a piece of salmon, Remoulade, an onion ring, and the top bun. I spread remoulade on the top bun too to hold it together. Yields: 5-6 servings.
