Lime Jell-O Salad

Ingredients
 

  • 1 pkg lime jello 8-serving size
  • 1 cup boiling water
  • 1 8oz pkg Neufchafel cream cheese, softened
  • 1 8oz can crushed pineapple, drained
  • ¾ cup chopped pecans
  • 1 cup lite Cool Whip
  • for garnish: candied pineapple, lime slices and zest, fresh pineapple, extra Cool Whip

Instructions
 

  • In a bowl, dissolve jellO in boiling water. Add cream cheese and stir until well blended. Add pineapple and pecans. Refrigerate 30-45 min until slightly thickened. 
  • Fold in the Cool Whip and pour into a 2-qt mold. Cover and refrigerate for 4 to 24 hours. 
  • Garnish.
