This Lime Jell-O Salad is a basic, throwback, old fashioned recipe like us Generation X’ers grew up with our grandmothers making.
I know they’re supposed to be passé, but I still love jellied salads!
Lime Jell-O Salad
Just an old fashioned, throwback recipe.
- 1 pkg lime jello 8-serving size
- 1 cup boiling water
- 1 8oz pkg Neufchafel cream cheese, softened
- 1 8oz can crushed pineapple, drained
- 3/4 cup chopped pecans
- 1 cup lite Cool Whip
- for garnish: candied pineapple, lime slices and zest, fresh pineapple, extra Cool Whip
In a bowl, dissolve jellO in boiling water. Add cream cheese and stir until well blended. Add pineapple and pecans. Refrigerate 30-45 min until slightly thickened.
Fold in the Cool Whip and pour into a 2-qt mold. Cover and refrigerate for 4 to 24 hours.
