I love this easy easy side dish – so little effort and delicious!
Lemony Couscous with Arugula
- 1 c whole wheat couscous
- 1 1/4 c Chicken Stock
- 1/2 c arugula, chopped
- 1 t olive oil
- zest of 1 lemon
- 1 t fresh lemon juice
- kosher salt, to taste (~1 t)
- fresh cracked pepper, to taste (~1/4 t)
Cook couscous according to package directions, replacing the water with chicken broth. Add the remaining ingredients and serve. Serves 4.
