Here’s an easy and beautiful cajun side from Emeril Lagasse. And it has bacon!
Crispy Bacon and Corn Maque Choix
- ½ lb bacon, chopped
- 4 c yellow and white corn mix, thawed
- 1-½ c chopped onion
- 1 c chopped green bell pepper
- cayenne pepper
- 2 c chopped tomatoes
- 1 c milk (I omit)
- ¼ c chopped green onions
In large skillet, cook bacon. Drain and set aside, but leave a couple tablespoons grease in pan. Add the oil, onion, bell pepper, salt, and cayenne (to taste) and sauté about 2 min. Add corn and cook an additional 10 min. Add tomatoes and cook, stirring occasionally, for 15 min until corn is tender. Add milk (I leave the milk out) and remove from heat. Stir in bacon and green onions and serve immediately.
