Why this recipe works

If I had to pick my favorite pizza recipe, this Chicken Cordon Bleu Pizza would be it. That says a lot, because pizza is my favorite food and so I have a lot of pizza recipes. But this clever pizza recipe is THE one I love the most of the most.

This recipe works because while the ingredients are so stinking simple, they SING together. Ham, sun-dried tomato, chicken tenders – a little salt, a little sweet tart, and a little crunch. Add in the Dijon cream pizza sauce, which is divine, and yummy cheese… this pizza recipe is killer.

About the ingredients

  • Sam Adams Beer Pizza Dough. This is my ride-or-die pizza dough recipe. It is easy to make, has ridiculously good flavor, and a lovely chew. That said, use your pizza dough of choice. Also, a prepared pizza crust also works for this recipe since the ingredients are all already cooked.
  • Butter, heavy cream, Dijon mustard, and kosher salt. These staples are for making the creamy pizza sauce.
  • Chicken tenders. This is easy and they can be store-bought, leftovers, from the freezer – whatever you like. I have picked up a couple tenders from the deli section at my grocery store, and I have also used tenders from the freezer to pop in the air fryer to get them cooked and crispy.
    Don’t want to use fried tenders? No worries, use grilled or backed chicken instead. This could be a great way to use leftover chicken (or turkey!) too.
  • Ham. Also, a great way to use leftover ham, but in full disclosure I usually buy diced ham because I can be lazy.
  • Chives. If not available, use green onion, Don’t omit though, because the subtle bite of onion adds so much to this rich pizza.
  • Sun-dried tomatoes. A little tart, a little sweet, sun-dried tomatoes are heaven and, like the chives, serve as a foil with these otherwise rich flavors. Get them packed in oil to ensure they are tender. I also purchase my sun-dried tomatoes cut julienne (so, no chopping!)
  • Cheese. I opt for a combo of mozzarella and Swiss. Classic cordon bleu has Swiss, but using only Swiss cheese on pizza does not work – Swiss cheese flavor is too assertive, and it isn’t a great melty cheese for pizza. Using mozzarella and Swiss gives the perfect flavor combination and gooey cheesiness for cordon bleu pizza.

How to make Chicken Cordon Bleu Pizza

Creamy Dijon Pizza Sauce

First things first, we want a hot oven and hot pizza stone.

This sauce is pure heaven on pizza and so easy to make – and we do so while the oven is heating. Just put the ingredients in a pan and simmer until reduced. That’s it – easy peasy.

Assemble the pizza and bake

Unless I am grilling my pizza, I assemble my pizzas right on the pizza stone rather than having to transfer to the stone after putting the toppings on floppy dough. The key though is to have everything ready and work quickly, since the dough will start cooking as soon as it is on the hot stone.

Form the dough round, either with your hands or using a rolling pin, and transfer to the heated stone. Then spread sauce and layer all the toppings. Bake and serve!

FAQs

Can grilled chicken be used rather than fried tenders?

Yes. Any chicken can be used. Just cut into bite-sized pieces.

Can this recipe use a premade or store-bought crust?

Yes. The ham and chicken are already cooked, so this recipe is great using a premade crust too. Just adjust the cooking time accordingly.

Heat the oven and make the pizza sauce

  • With the pizza stone in the oven, heat oven to 450℉. Heat another 15 minutes to make sure the pizza stone is fully heated.
  • Meanwhile, heat a medium, nonstick skillet on medium-high heat. Add the butter, cream, Dijon, and salt. Reduce heat and simmer until sauce is thickened and reduced by half.

Assemble the pizza

  • Roll out the pizza dough on a lightly floured surface and transfer to the heated pizza stone.
  • Spread the Dijon-cream sauce over. Top with the chicken, ham, chives, sun-dried tomatoes, and cheeses.

Bake

  • Put the pizza stone and assembled pizza in the oven. Reduce heat to 425℉ and bake 15 minutes until crust is golden and cheese are melted.

Notes

A note on the cream sauce – only use as much as is needed to lightly cover the dough. It may not be necessary to use all of the sauce.
