First time I made this, I earned major wife points. Hubby loved it 🙂 This goes really well with lemony couscous and grilled asparagus for the win!
Grilled Swordfish with Wine and Herbs
- 4 swordfish steaks (~5 oz each)
- kosher salt and fresh cracked pepper
- 2 T dry white wine
- 1/4 olive oil
- 1 T each fresh chopped parsley, thyme, basil, oregano – this is what I have on hand, but anything will work
- zest of 1 lemon
- 1 large clove garlic, finely chopped
- ~1/2 t paprika
Heat the grill to med-high (~400 deg F).
Meanwhile, rinse the steaks and pat dry. Season with salt and pepper. Combine remaining ingredients and brush over fish, both sides. Let sit 5 min.
Grill swordfish over med-high (~400 F) 3 min. Brush again with herb mixture, flip and grill another 3-4 min until done – but still moist! Serve.
