I should name this recipe “Pulled Pork for the Rest of Us” meaning pulled pork for those of us (i.e. most of us) that don’t have some big smoker in the backyard to do this “properly”. Not that I don’t want a big smoker – I do. Badly. But honestly, this recipe makes a pulled pork that is so succulent and so flavorful, and paired with my light and refreshing Lime and Cilantro Coleslaw – I can’t even stand how good this is!
- Take the pork, and rub all over with the grilling rub. Let sit 20 minutes. Put in the slow cooker and pour the soda over. Cook on low for 6-7 hours. Move the roast to a large washable cutting board, and pull into shreds using 2 forks. Serve with coleslaw and BBQ sauce in buns.
